Fudgy Chocolate + PB Black Bean Cookies (gf + vegan)
An incredibly deliciousâ light, yet fudgy, chocolatey cookie with a hint of peanut butter đ. *(And, if you donât tell, they wonât know how healthy this cookie actually is for them!)*
Hands down, the most delicious sweet treat â especially for all you chocolate + PB lovers!
As someone who doesnât eat eggs; gluten-free, flourless recipes can be a little hard to replicate. Iâve tried my hand at Black Bean brownies, but so far theyâve never turned out the way I remember brownies to beâlight, yet fudgy. However, these flourless delights â Fudgy Flourless Chocolate + PB Cookiesâ totally pass my test! As I mentioned in this monthâs newsletter1, Iâve been tweaking and testing this recipe for the past 6 weeks, and I finally feel like itâs ready to share with you.
Not only are they easy-to-make, but theyâre low-fat and protein packed!

Itâs hands down, my current favorite sweet treat to appease my chocolate + sweet craving!
The best part, is these delicious little treats are easy-to-make, low fat and protein-packed! Itâs filled with so many wholesome ingredients! Sometimes people hear the ingredients and thinkâ âuhhh, Iâm good, I think Iâll passâ. But these cookies are so good. They definitely fall in the category of, âif you donât tell, theyâll never know how healthy this cookie actually is for themâ :)!
Black Beans - rich in protein, fiber, potassium, folate, vitamin B6â all while being fat free. What this means is that these beans donât raise blood sugars, and due to itâs fiber and low fat content, these beans help decrease cholesterol in the blood, therefore decrease the risk of heart disease.
Peanut Butter - a healthy fat, packed with protein, iron, folate, magnesium and zinc
Ground Flax Seed - helps with digestion, as well as helps lower total blood cholesterol and LDL cholesterol levels.
Cocoa Powder - contains antioxidants that help improve cholesterol and blood sugar levels. And, itâs rich in theobromine, which helps reduce inflammation.
Ways to Enjoy Them
With these little guys being cookies â they are obviously very versatile :)! But here are a few ways Iâve enjoyed them and plan to enjoy them this summer.
Just As They Are â they are perfect on their own, but they of course pair nicely with a glass of milk or a cup of coffee or tea.
Ice Cream Sundae â you can warm them a little and use as a base to an ice cream sundae or as a crumble on top.
Ice Cream Sandwich â I suspect these cookies will workout great for ice cream sandwiches! I look forward to trying that out this summer.
